Ultra High Temperature (UHT) Processing

Theory of Operation

One of the common trends in the liquid food market of today is that the demand for innovative products and value-added long-life products is increasing rapidly. The innovative products will typically count products like flavoured milks, functional foods, lactose-reduced milk, various sauces and desserts, value-added products (vitamin added, probiotics etc). These demands will put even higher pressure on the supplier as regards product diversification, product safety, and consistently high quality. The choice of technology is dependent upon factors such as the product specification, viscosity and heat sensitivity.


 

When it comes to ultra-high temperature (UHT) processing of low viscosity products such as varieties of drinking milk or other beverages, there are several direct and indirect heating technologies to choose from. Direct heating UHT technology inject or infuse steam directly into the product which enables high temperature treatment to destroy microorganisms with a very short holding time, minimizing chemical changes to the product. Indirect heating UHT technology uses plate or tubular heat exchangers which separate the product from direct contact with the heat source enabling excellent heat recovery within the system.
