Overview

The goal of Ultra High Temperature or UHT treatment is to minimize the presence of microorganisms while equally minimizing the chemical changes within a product post processing. The core to effective UHT treatment is finding the balance between optimal temperature and processing time. Through careful product testing, a UHT process has the potential to extend product longevity and retain the quality taste, texture and depth of the original product.  

What is UHT Treatment

UHT treatment is the heating of a product to 130 to 150 degrees Celsius to stabilize and sterilize prepared foods and liquids. The UHT process is designed to significantly lower the likelihood of microorganisms spoiling products during extended storage or transportation. Used for products above a 4.6 pH level, UHT processing is typically integrated into the production of flavored milk, creams, soups, sauces, desserts, prepared fruit and dairy alternatives.

UHT treatment relies on a sterilizer and an aseptic unit to extend the shelf life of treated products. The UHT process also allows some specifically treated products to be stored without refrigeration, lowering the effective holding cost of the product. 

 

Direct and Indirect Treatment

UHT treatment exists in two separate process methods, direct and indirect heating. Both methods affect the output of the product and differ structurally. Direct UHT Processing  

Direct UHT processing often utilizes steam directly injected into the product that is followed by flash cooling to quickly achieve a high level of product quality. The inherent cost of direct UHT processing is the higher energy consumption of the process. Especially in ultra-pasteurization of dairy products where the UHT process may be running constantly under strict regulation, the energy cost could quickly become substantial. 

Indirect UHT Processing

Indirect UHT heating is designed for the product to not directly contact the heat source, but to be indirectly heated through a heat exchanger. Diverging into multiple methods of UHT processing, there are a range of heat exchangers each with their own attributes. 

 

Milk Ordinance

The dairy industry, which often utilizes ultra-pasteurization or UHT processes is held to the Food and Drug Administration’s Grade A Pasteurized milk ordinance in America. However, the governance surrounding UHT treatment varies globally. In a range of countries, specific temperature and time restrictions for UHT treatment are set by government regulations.
